8 4-oz boneless center-cut pork chops
1 cup all-purpose flour
1 cup nonfat buttermilk
1 tsp Cajun seasoning
3 tbsp vegetable oil
¼ tsp garlic powder
1 cup fat-free milk
¼ tsp salt

Directions:
Directions:
Reserve 2 tbsp flour and set aside. Place remaining flour in shallow dish. In another dish, combine Cajun seasoning, garlic powder and pepper. Rub chops evenly on both sides with seasoning mixture. Dip chop in buttermilk, dredge in flour, then lightly coat both sides with vegetable cooking spray.

Cook in hot oil in a large skillet, medium-high heat, 5 minutes on each side until golden brown. Drain on paper towels. Add reserved 2 tbsp flour to pan drippings in skillet, stir in milk and salt, stirring constantly, until thickened and bubbly. Garnish with coarse ground pepper. Serve immediately.
