3 medium green tomatoes, cut into ⅓”-¼ slices
½ cup cornmeal
1 large egg, lightly beaten
1 tsp salt
½ cup buttermilk
½ tsp pepper
½ cup all-purpose flour, divided
vegetable oil

Directions:
Directions:
Combine egg and buttermilk; set aside. Combine ¼ cup flour, cornmeal, 1 tsp salt and pepper in a shallow bowl or pan. Dredge tomato slices in remaining ¼ cup flour; dip in egg mixture, and dredge in cornmeal mixture.

Heat oil in large skillet to 375º. Put tomatoes, in batches, into hot oil, and cook 2 minutes on each side or until golden. Drain on paper towels or rack with paper towels underneath. Sprinkle hot tomatoes with salt.

A traditional Southern favorite. Fry in a cast-iron skillet with about 1/4” to 1/2” of oil. Salt them as they drain and eat them while they’re hot. Blue Willow – eat your heart out. Mine don’t have that thick coating – they have character and taste.
