2 ¼ C. small elbow macaroni
3 C. milk
5 Tbsp. salted butter
nonstick cooking spray
1 ½ C. bread crumbs
3 Tbsp. all purpose flour
¾ tsp. salt
¼ tsp. black pepper
⅛ tsp. ground nutmeg
Several dashes Tabasco Sauce (start with 4-6 dashes. You can always add more)
16 oz. Cabot Extra Sharp Cheddar

1. Preheat oven to 375ºF. Coat a 9x13 in. pan with nonstick cooking spray and set aside.

2. Stir macaroni into large pot of boiling salted water and cook for 5 min. after water returns to boil. (Macaroni will still be firm). Strain and rinse with cold water.

3. In small sauce pan over medium-low heat, warm milk to just below simmer

4. In pasta pot, melt the butter over medium heat. Add 2 T. of melted butter to bowl with bread crumbs and mix well.

5. add the flour to the pasta pot and whisk together with the butter to build a roux. cook for 2 min. careful not to let it color. Add the milk in small amounts whisking until smooth each time and let cook for 3 min. whisking often.

6. Remove from heat and whisk in salt, pepper, nutmeg, Tabasco and half of the cheese. Now stir in the drained pasta.

7. Spread ⅓ of pasta mixture in bottom of baking dish and cover with ⅓ of remaining cheese. Repeat 2 more times and then scatter the bread crumbs over the top.

8. Bake uncovered for 25 to 30 min. Top will be golden brown and bubbling throughout. Let stand for 5 min. before serving.

This recipe is true comfort food! Try it with diced ham and/or green chili. It is delicious. Of course any cheese will do, but Cabot Extra Sharp is the best. You can find Cabot at Wal-Mart.
