For dressing:
1/4 cup red wine vinegar
2 Tbsp. lemon juice
1 tsp. honey
1/2 cup oil

6 Cups chicken broth
1 pound box of orzo
1 can diced tomatoes or diced fresh tomatoes
Feta cheese, crumbled, to taste
1/2 cup fresh basil, chopped
1/2 cup green onion, chopped
1/2 cup toasted pine nuts (optional)

Directions:
Directions:
Cook orzo in chicken broth; drain and cool.

Whisk together vinaigrette ingredients.

Combine orzo, tomatoes, basil, onions and pine nuts. Toss with the vinaigrette. Top with Feta cheese.

This can be served at room temperature or chilled.
