DRY MIXTURE
All-purpose flour 1 1/2 cup
Natural bran 1 1/2 cup
Wheat germ 1/4 cups
Lightly packed brown sugar 1/2 cup
Baking soda 2 teaspoons
Salt 1/2 teaspoon
Cinnamon 1 teaspoon
Nutmeg 1/2 cup
Chopped walnuts 1/2 cup
Chopped dates 1 cup

MOIST MIXTURE
Eggs 2 large
Vegetable oil 1/4 cup
Cooking molasses 1 1/2 cup
White vinegar 2 tablespoons
Finely grated Carrot 1 cup

Preheat oven to 400ºf (200ºc) and prepare 18 muffin cups

Combine all ingredients of dry mixture in a large bowl.

In a medium bowl beat eggs lightly and stir in remaining ingredients of moist mixture.

Add moist mixture to dry mixture all at once and stir just enough to moisten.

Fill 18 prepared muffin cups 3/4 full.

Bake 20-25 min

(tip- Four large fresh carrots will make about 1 cup of grated carrot)
