Ingredients: 1 Jiffy Cake Mix (yellow cake mix)
1 small Vanilla Instant Pudding
1 8 oz. Cream Cheese
1 1/2 cups Milk
1 large can Crushed Pineapple
1 12 oz. Cool Whip
Chopped Walnuts if desired

Directions: |
Directions:Make yellow cake according to box directions. Jiffy mix is a smaller box mix than a regular yellow cake mix. You may want to only use 1/2 to 3/4 of the mix in cake pan. Bake the balance in another container. When cake is cook mix Pudding, Cream Cheese and Milk together until smooth and it thickens. Spread onto cake and put in refrigerator to firm up. Mix crushed pineapple and cool whip together and spread on top of pudding mixture. Sprinkle with chopped nuts if desired.
Refrigerate overnight for serving or at least 3 hours. |

Notes: This recipe was given to me by Grace Anderson when I was 18 years old. Still remains one of my favorite go to recipes. I like to use pistachio instant pudding and it is always well received. Very nice for a summer desert.
