Four 8-ounce bone-in pork rib chops (1/2 to 3/4 inch thick)
Cajun seasoning
1/4 c. vegetable oil
2 medium onions, finely chopped
1 medium green bell pepper, stemmed, seeded, and finely chopped
3 garlic cloves, minced
1 quart chicken broth
Kosher salt and freshly ground black pepper

Pat the pork dry and season with Tony's. Heat the oil in a large cast-iron skillet over medium-high heat. Cook the chops until golden brown on both sides, then transfer to a plate.

Add onion, bell pepper, and garlic to the fat in the pan. Cook for 3 to 5 minutes, stirring occasionally, until the vegetables are wilted. Add 1/2 cup of the broth to deglaze the bottom of the skillet, scraping up the brown bits.

Return the meat to the skillet, add the remaining 3.5 cups broth, bring to a simmer, cover, and cook for 1 hour, until the chops are tender. Add more broth as needed. Season to taste and serve.
