Ingredients:  
1 ob carrots, peeled and sliced
1 stick butter
3 eggs
1 c sugar
3 T flour
1 tsp baking powder
1 tsp vanilla

Directions:
Directions:
Cook carrots in salted water until tender; drain; put in blender with butter and puree.

Pour mixture into bowl. Add all other ingredients and mix well.

Pour into greased souffle or deep casserole dish. Bake at 350º for 45 minutes or until firm.

To make it easier, use a 1 lb bag of baby carrots, already peeled and clean.
