6 slices bacon, chopped
1 onion, chopped
2 green peppers, strips
2 c. uncooked rice
2 cloves garlic, minced
1 (12 oz) can tomatoes, diced
2 c chicken broth
1 tsp salt
1/2 tsp thyme
1/4 tsp red pepper
1 lb cooked ham, cut in strips
1/2 lb sausage

Directions:
Directions:
1. Cook bacon. Add onion to bacon drippings. Cook over low heat, 5 minutes. Add green pepper, cook 3 minutes.

2. Add rice and increase temperature. Cook until rice become somewhat opaque, stirring frequently.

3. Add bacon, garlic, tomatoes, broth, salt, thyme, red pepper, ham, and sausage. Bring to a boil.

4. Cover and bake at for 35 - 40 minutes or until rice is tender and liquid absorbed.
