3-5 lbs boneless pork loin
1 green bell pepper
1 medium onion, chopped (about 1 cup)
1 large can of diced green chilies
14.5oz can diced tomatoes
4 cloves garlic, minced
1 1/2 tsp salt
2 tsp cumin
2 tsp oregano
1 chipotle pepper (chili in adobo sauce)
2 tsp chili powder
1/4 cup cilantro, chopped

Directions:

1. Combine green chilies, diced tomatoes, garlic, salt, cumin, oregano, chipotle pepper, and chili powder. Blend using an immersion blender (or regular blender).
2. Place pork loin in a crock pot. Add the green pepper and onion to the crock pot. Pour sauce over pork loin. Cook about 7-8 hours on low heat, or 3-4 hours on high heat.
3. Shred the pork when finished cooking. Add the cilantro at the end. Serve with cilantro lime rice, beans, cheese, tortillas, salsa, sour cream, and guacamole.
