⅓ c. sushi rice
2 tsp. seasoned rice vinegar
24 Belgian endive leaves
1 T. wasabi
4 oz. surimi, cut into small pieces
¼ c. shredded carrot
1 ripe avocado, cut into small pieces
1 T. soy sauce
2 T. black and/or toasted sesame seeds for garnish

Cook rice as package directs. Cool slightly; add vinegar and toss with a fork. Let cool. With wet hands, form about ½ tablespoon rice into a mound and place in bottom of an endive leaf. Top with a small amount of wasabi; Add a few pieces of surimi, carrot, and avocado. Drizzle with a few drops of soy sauce and sprinkle with toasted and/or black sesame seeds.

Very easy to prepare---takes time, but makes a dramatic appetizer! Rice can be made the day before; cover and refrigerate. ‘Rolls’ can be made several hours ahead providing you have space to refrigerate them.
Recipe will only use about half of the avocado, so plan another appetizer or salad to utilize the rest.
Serve on individual plates or on a platter, buffet style with pickled ginger slices and additional wasabi if desired.
