Chocolate Pie Recipe

Chocolate Filling


Ingredients:

1 1/2 c. sugar
3 T. cornstarch
1/2 c. cocoa
3 c. milk
1 T. butter
1 1/2 tsp. vanilla
deep dish pie shell

Directions:
Directions:
Bake pie shell.

Separate the 3 egg whites from the yolks. Pour egg yolks in a heat resistant bowl, beat slightly; whites in a large mixing bowl.

Mix the sugar, cornstarch, and cocoa in a large saucepan.
Stir in milk, gradually.

Cook over medium heat, stirring constantly until mixture thickens and boils.
Boil one minute.

Remove from heat and gradually stir at least half of the hot mixture into the slightly beaten egg yolks.
Then blend into the hot mixture in the same pan.
Boil one minute more, stirring constantly.
Remove from heat, stir in butter and vanilla.

Pour into the prebaked pie shell.
Spread meringue lightly over pie, sealing edges.

Bake until delicately brown at 350.
 

Coconut Pie Filling

3 c. milk
3 eggs
1 T. butter
3/4 c. shredded coconut
1 1/2 tsp. vanilla

1/4 c. sugar
1 tsp vanilla

Directions:
Directions:
Beat egg whites until fluffy.
Add other ingredients and beat until well blended and meringue peaks.
Spread lightly over pie filling, sealing edges.
Bake pie on cookie sheet until delicately brown.

For coconut pie, add flakes of coconut on top of meringue.

For chocolate, add chocolate swirls on top of meringue.
