4 Large chicken breast
1½ tsp garlic powder divided
¼ tsp Paprika
1 c mild cheddar cheese
1 tbsp mayo
2 tbsp Olive oil
1 c finely chopped broccoli
½ c finely chopped red bell pepper

Preheat oven 425. Season both sides of chicken breast with salt,pepper, paprika and ½ tsp garlic powder.
Use sharp knife to cut slice in chicken breast. Lay breast flat place hand on top slowly and carefully slice almost through leaving a pocket for filling.
Place broccoli and bell pepper see note, in microwave bowl add 2 tbsp water. Cover with plastic wrap and microwave for 1 min.. Drain any excess water, to the bowl add-bell pepper if not already done cheese,mayo remaining garlic powder, salt and pepper to taste. Mix until combined then divide mixture between the chicken breast using a toothpick to secure if necessary.
Heat a large oven safe skillet (I prefer cast iron) over medium heat add olive oil. Sear both sides of chicken for 3-4 min. Cover skillet with foil and bake in preheated oven for 15-17 min.or until chicken reads 165º degrees.
Let rest, covered for 5 min. ENJOY!

I would steam my bell pepper with broccoli especially if serving kids more flavor less crunch.
