2 lbs clean shrimp
Boiled chicken / save broth
1 lb smoked sausage
2 lbs crawfish tails
3/4 cup chopped onion
1/2 cup chopped bell pepper
1/4 cup celery leaves
1 glove minced garlic
1/2 stick of oleo
3 Tbs olive oil
2 Tbs parsley flakes
1 can tomato paste
2 tsp salt
1/2 tsp red pepper
1 bay leaf
Peeling of one lemon
1 Tbs lemon juice
1 tsp thyme


Directions:
Directions:
Saute veggies in oil and oleo for 6 minutes on medium heat.
Add everything but shrimp, cover and simmer for 45 - 60 minutes.
Add shrimp and continue simmering for 20 - 30 minutes until shrimp are cooked.

Serve over rice.

You will need to add more liquid (water) as you cook. My recipe calls for 1 1/2 cups of water, but I always add more for either thinning or thickening.
