2 cups chick peas drained, reserve juice
2 cloves of garlic
1/3 cup tahini (sesame paste) or almond butter or peanut butter
Juice of 1 lemon and one lime
Zest of 1 Lemon (optional)
2 tbsp olive oil
chickpea cooking juice or can liquid as needed
1/2 tsp. cumin (optional)
1/8 tsp cayenne pepper
1/4 to 1/2 tsp salt and pepper to taste

Drain chick peas, reserve liquid in a bowl and approx. ten chick peas for garnish. Put garlic in food processor and mince. Add chick peas and mince, scraping down the sides. Add tahini, olive oil and lemon/lime juice and zest, cumin and cayenne. Process until smooth. Taste. Add enough reserve chick pea juice to make a thick creamy consistency--not much is usually required as it should be about hold a shape (it’s a dip not a sauce).
Serve on a platter or shallow bowl, and make wide well in the middle, in which you put the reserved chick peas. Sprinkle with chopped parsley or toasted sesame seeds, or a tiny bit of paprika or smoked paprika for color. Drizzle with olive oil and serve with fresh pita bread, crackers or pita chips.
