4 large, ripe avocados
1/4 c onion, finely diced
1/4 c fresh cilantro, finely diced
1 tomato, chopped and seeds discarded
1 Tbsp olive oil
2 tsp lime juice
1/2 tsp sea salt
1/4 tsp pepper
bag tortilla chips

Directions:

Halve avocados. Remove pits. Remove skins. Cut into bite-sized pieces. Place in bowl. Add remaining ingredients. Stir with spoon. Taste and adjust seasonings or lime juice. Serve with chips.

If you make it ahead of time. Smooth the top. Pour cold water over until 1/2-inch deep. Cover with lid or plastic wrap. Store in fridge. Discard water, stir and serve.
