3 cups cooked rice
1/2 cup whole wheat panko bread crumbs
1 tsp smoked paprika, divided
1 TBSP olive oil
1 lb ground beef
1 medium yellow onion, finely chopped (about 1 cup)
2 garlic cloves, minced
1/2 cup mushrooms, chopped (optional)
1 1/2 tsp salt
3/4 tsp pepper
3 TBSP tomato paste
2 TBSP mustard
2 TBSP worcestershire sauce
1 14.5-oz can diced tomatoes
2 cubes beef bouillon
1 1/2 cups grated cheddar cheese, divided
shredded lettuce for serving
chopped pickles for serving

1. Preheat the oven to 375º.
2. In a small bowl, combine panko and half the paprika. Set aside.
3. Heat the olive oil in a large skillet over medium heat. Saute onion and hamburger until onion is soft and beef is no longer pink, breaking hamburger into small pieces. Rinse and drain. Return to skillet.
4. To the hamburger and onion, add garlic, mushrooms, salt, pepper, tomato paste, mustard, and Worcestershire sauce. Cook for 3 minutes over medium heat. Add the diced tomatoes and beef bouillon and cook for another minute.
5. Fold in the rice and 3/4 cup of the cheese. Transfer mixture to a large baking dish, smoothing the top.
6. Top with remaining cheese and panko mixture. Bake for 25 min or until cheese is melted. Let hotdish rest for 10 minutes before serving. Serve with shredded lettuce and chopped pickles.
