Beets
2 cups vinegar
1 cup sugar
1 tsp. pickling allspice
and salt to taste

Directions:
Directions:
Boil beets until tender. In cold water, slip skins off.

Boil vinegar, sugar, allspice and salt together 2 minutes. Put beets in and boil for a few minutes more.

Pack into jars and seal.

This recipe card is the oldest one Grandma Anna Schroeder kept that we know of. At the bottom of the card, Grandma wrote this down. "Mrs. Franzens receipt gave to me in year 1914." There were always canning jars of all kinds of pickles brought to our family reunions. Beet pickles, okra pickles, sweet and dill pickles. I remember all kinds!
