1/2 pound bacon, cooked and crumbled
10 ounce package chopped spinach, thawed and drained
8 ounces sour cream
2 (9 inch) pie crusts
2 tablespoons olive oil
1 onion, diced
1/2 pound mushrooms, diced
2 cups smoked or honey ham, finely diced
8 ounces shredded monterey jack cheese
8 ounces shredded cheddar cheese
4 ounces grated parmesan cheese
4-5 eggs
1 cup half-and-half
1 tablespoon dried parsley
salt and pepper to taste

Directions:
Directions:
Preheat oven to 375 degrees.
Brush crusts with 1 egg white + 1 teaspoon water and bake 10 minutes.
Saute onions and mushrooms.
Combine all ingredients well in large mixing bowl.
Pour into pie crusts on baking sheet.
Bake for 40 minutes until top is golden brown.
