Parmesan Chicken Recipe

1 lb spaghetti noodles
1 tsp salt
water
2 chicken breasts
2 cup shredded Parmesan cheese
1 egg
1 garlic cloves, minced
1/2 tsp salt
1/2 tsp pepper
2 Tbsp oil
2 Tbsp butter
1 jar marinara sauce

In a large stock pot, 3/4 full of water bring to boil over high heat. Add salt and noodles and boil, uncovered for 8 minutes or until al dente.

Meanwhile heat oil and butter in a non-stick pan over medium-high heat. Cut each chicken breast in half. Place Parmesan cheese in a shallow dish. Place egg, garlic, salt and pepper in a bowl and beat. Dip each chicken breast in egg to coat. Then press into the cheese on each side. Place in hot oil/butter. Repeat until all chicken is in pan. Cook until brown on side one, flip and cook on side two. Remove to paper towel on a plate.

Dump out oil but don't clean pan (allow some oil to remain). Place back on stove over medium heat. Add marinara sauce. Stir occasionally until heated through.

Drain noodles and place in a serving dish. Add heated marinara sauce and gently stir to coat. Serve a heap of spaghetti on a plate with a chicken breast on top. Sprinkle with more Parmesan cheese.

This is a quick version of Parmesan chicken. Make sure your pan is non-stick or a Dutch oven and that the oil is hot before you add the chicken or it will stick and the cheese will come off.
