1/2 cup vegan butter
1/2 smooth almond or peanut butter
2 tbsp ground flax meal
6 tbsp water
1/2 cup sugar( Plus several tbsp for rolling in)
1 cup dark brown sugar
1 tsp vanilla
1 tbsp olive oil
4 tbsp cashew milk
1 tbsp maple syrup
2 cups flour
1 tsp cinnamon
1 tsp baking soda
1/4 tsp baking powder
3/4 tsp salt
3 cups oats
1/2 chocolate chips(frozen)1/2 cup butterscotch(amazon has vegan version)

Let the butters sit out until they come to room temp. Whisk the flax and water and put in frig for 15 min.. Mix the sugars and butters until creamy add the flax mixture a little at a time. Mix in the vanilla.cashew milk.olive oil and maple syrup.In a separate bowl whisk the flour,salt,baking soda, and baking powder . Add to your creamed mixture. Mix just till combined. Mix in the oats and stir in the chips. Use a cookie scoop and scoop out and roll into sugar.Bake on cookie sheet lined with a silicon mat or parchment paper. Bake for 12 to 14 min or until edges become golden brown. Cool on wire rack.
