8 oz dry rice noodles
2 Tbsp brown sugar
2 Tbsp lime juice
3 Tbsp soy sauce
5 drops hot sauce
2 tsp oil
3 scallions, sliced
1 garlic clove, minced
2 large eggs, beaten
1/2 c fresh cilantro, chopped
1/4 c peanuts, chopped

Bring a large sauce pot 2/3 full of water and bring to boil. Remove from heat. Add the rice noodles and set aside to soften.

In a skillet, saute scallions and garlic in oil over medium heat for 2 minutes. Add eggs and scramble with veggies. Remove to plate and set aside.

Drain noodles. Add to skillet. Whisk sugar, lime juice, soy sauce and hot sauce in a bowl and then add to noodles. Cook 3 minutes. Add veggies and eggs back in. Toss to coat.
