1 c rice
2 c water
2 Tbsp oil
2 boneless chicken breasts
1/2 c shredded carrots
2 garlic cloves, minced
3 eggs, beaten
1/2 c green onions, sliced
1/2 c frozen peas
3 Tbsp soy sauce

Directions:
Directions:
Bring water to boil in a pot. Add rice and cook 30 minutes.

In a skillet, use kitchen shears to cut chicken into bite-sized pieces and cook in oil over medium-high heat until light brown on all side. Remove to plate and set aside.

In skillet add carrots and garlic, cook 3 minutes. Push to one side. Add eggs to free side and scramble. Add chicken back in and mix well.

In a large bowl, mix chicken/veggies and rice. Mix in green onions, peas and soy sauce.
