1 tsp coriander
1 tsp black pepper
1 tsp oregano
1 t garlic powder
1 Tbsp celery salt
1/4 c brown sugar
1 Tbsp ground cumin
1 Tbsp paprika
1/2 c mustard
7 lb pork roast

Directions:
Directions:
Preheat oven to 250 F.

Mix coriander through paprika in a bowl. Run the pork roast with mustard. Press rub on to roast. Cook at 250 F until internal temperature is 170 F. Remove from oven and wrap roast twice in foil. Increase oven temperature to 300 F. Cook until internal temperature is 200 F. Unwrap and drain liquids (reserve if you want). Re-wrap and let pork rest 15 minutes before slicing.

Instead of baking, you can smoke the roast in a large smoker. Follow the same temperature and wrapping instructions. Serve with corn on the cob and potato salad or baked beans.
