1 onion, diced
2 Tbsp butter
6 boneless chicken thighs
1 tsp garlic paste
1 tsp ginger paste
1/3 c tomato paste
2 tsp salt
1/2 tsp turmeric
1 tsp masala
1 tsp ground cumin
2 c chicken broth
1 can coconut milk
1 Tbsp sugar
1 bay leaf
1/4 c ground cashews
2 potatoes, cubed
2 carrots, sliced
1 c water
1 c rice
1 Tbsp butter
1 tsp salt

Directions:
Directions:
In a Dutch oven, saute onion in butter for 3 minutes. Add chicken thighs and brown on each side. Set chicken aside.

Add garlic through sugar ans stir to mix. Put chicken back in. Add potatoes, carrots, cashews and bay leaf. Bring to simmer, reduce heat to low, cover and cook for an hour. Remove lid, cook for 30 minutes or more.

During the last 30 minutes of cooking, make rice. Bring water to boil in large pot. Add rice, butter and salt. Reduce heat to low, cover and simmer 30 minutes or until all water is absorbed.

You can make in a crock pot. After sauteing onion and chicken, add all to carrots in crock pot. Cook on low 8-10 hours. Then make rice.

Jeremy's colleague Abay invited us over for dinner. His wife Reviti taught me how to make curry. She was new to the US and her English was not very good. She eyeballed all measurements and I took notes guessing at the amounts. We had a great time trying to communicate while cooking - lots of laughing. And the curry is delicious!
