2 eggplants

2 cups whole milk

All-purpose flour for coating

Salt

Oil for frying

Honey

Directions:
Directions:
Peel eggplant and cut into 3 inch X 1/2 inch rectangular squares. Place in bowl, add milk to cover and allow to soak for 2 hours.

Place flour on a plate with a dash of salt. Place eggplant slices in flour and coat until fully covered. Shake of excess.

Deep fry in oil, flip slices to until fully light brown. Note, the oil should not be too hot..just enough to allow the fritter to crisp.

Serve hot and dip into honey. Enjoy!

We have also mixed 2 parts all-purpose flour to one part rice flour to add more crisp.
