3 eggplants (about 2 pounds)
3 cloves crushed garlic
1/3 cup extra virgin olive oil
1/4 cup chopped parsley
1/4 cup tahini
2 tablespoons lemon juice
sea salt to taste

Directions:
Directions:
Broil eggplant, rotating until charred. Wrap in foil and rest 10 minutes.
Peel charred skin off eggplants. Drain excess liquid off.
Transfer flesh to food processor.
Add garlic, lemon juice, parsley, salt and pulse.
Pour in tahini and olive oil and blend well until light and creamy.
Salt to taste.
Serve with fresh pita triangles or vegetables.
May refrigerate up to 5 days.
