1 c. bran flake cereal
1 c. softened butter
1 c. sugar
2 eggs
1 tsp vanilla
2 c. buttermilk
2 1/2 c. flour
2 tsp baking soda
1/2 tsp salt
3 c Kelloggs All Bran Cereal

Directions:
Directions:
In small bowl, soak bran flakes in 1 cup hot water. In mixing bowl, cream butter and sugar; beat in eggs and vanilla. Add flour, salt and soda alternately with buttermilk. Mix in All Bran. Fold in bran flake mixture. Fill greased muffin tins 2/3 full and bake for 20 minutes in preheated 400º oven.

This batter keeps well in the refrigerator so you can bake a few fresh each morning. You can substitute equal parts applesauce for the butter to reduce the fat if you wish. These are really good with an added streusel topping.
