North African Tagine Recipe

2 Tbsp oil
1 onion, chopped
2 garlic cloves, minced
2 tsp ground cumin
1 tsp ground turmeric
1/2 tsp ground cinnamon
pinch cayenne pepper
1 15-oz can chickpeas, drained
1 large tomatoes, chopped
1 large carrots, peel and sliced
1 14-oz can vegetable broth
2 small zucchinis, cubed
1 tsp dried mint
1 c couscous

In a Dutch oven, heat oil over medium-high heat. Add onion, cook 6 minutes. Add garlic, cumin, turmeric, cinnamon and cayenne. Cook 30 seconds. Add chickpeas, tomatoes, carrots and broth. Bring to boil. Reduce heat and simmer for 5 minutes.

Stir in zucchini and cook 5 minutes. Sprinkle with mint.

Prepare couscous according to directions on container. Serve tagine over couscous.

I made this for a work potluck and when Jeremy came home while I was cooking he wouldn't let me take it to the potluck - it smelled way too good. It is delicious! You can up the cayenne to increase the heat.
