3 c flour
3 Tbsp oil
1 c very warm water
1 1/2 tsp active yeast
1 tsp sugar
1 tsp salt

Directions:
Mix 1 cup of flour with oil, sugar, salt, water and yeast. All to site for 3 minutes, stirring every minute.

Add rest of flour. On a floured surface, knead, adding flour as needed, until smooth and elastic. Split into 2 even balls. Wrap each in plastic wrap. Allow to rest 30 minutes while you chop up the toppings.

Preheat oven to 450 F. Put two pizza stones in oven to heat up. Roll out each crust. Top with toppings. With hotpads, carefully take stones out, one at a time, and transfer the pizza to the hot stone. Put back in oven. Try to do this transfer fast to keep all heat in oven. Cook 15 minutes - watch and remove as soon as crusts dark brown and toppings cooked.

It took me years to develop the best pizza crust recipe - this is it! Using pizza stones and a wooden paddle to transfer the pizza to and from the stone is critical. The right equipment makes the pizza perfection!!!!!

Best toppings - minced garlic, sauce, mushrooms, onion, green pepper, Canadian bacon (or pepperoni or cooked sausage) and big slices of Mozzarella cheese.
