1 tbsp olive oil
1 large onion chopped
1 green bell pepper seeded and chopped10 oz enchilada sauce
8 oz cream cheese
14 oz diced tomatoes
1 c black beans drained and rinsed
1 c frozen corn
2 c chopped chicken breast
1 c chicken broth
shredded

Directions:
Directions:
heat the olive oil in a large pot over medium heat
add the onion and bell pepper; cook for 5 minutes until soft
add the enchilada sauce and cream cheese-cook until cream cheese is completely melted
add diced tomatoes, black beans, frozen corn; stir
add chopped chicken and broth
stir and cook 10-15 minutes, stirring occasionally

DO NOT OVER BOIL SOUP. IT WILL CURDLE THE CREAM CHEESE

if too thick add more broth
remove from heat and add shredded
