2 1/4 c. oat bran
1 tbsp. baking powder
1/4 c. raisins
1/4 c. brown sugar
2 egg whites
1 1/4 c. skim milk
2 tbsp. vegetable oil (preferable Puritan)
1 c. blueberries or ripe fruit

Directions:
Directions:
In a large bowl, combine oat bran, baking powder, raisins and brown sugar. In another bowl, mix egg whites, milk, and oil. Stir into oat bran mixture until all ingredients are moistened. Stir in blueberries or other fruit. Line muffin plans with baking papers and fill to the brim with batter. Bake 17 minutes in preheated 425º oven. Makes 8-12 muffins depending on pan size. Freely substitute fruits especial bananas so black and ripe that they are disgusting, and try low sodium baking powder. ( i put 2 bananas in)
