4 tortilla shells
4-5 jalapenos (less for milder rolls)
8 oz cream cheese room temperature
1-2 c. grated cheese
1 c. diced bacon

Directions:
Directions:
Boil jalapenos for 6 minutes. Let cool. Dice peppers. In a mixing bowl stir cream cheese until smooth. Add peppers bacon and grated cheese, stir until combined. Lay tortillas out. Divide mixture into fourths and spoon onto tortilla shells. Spread mixture to edges of tortillas. Roll up jelly roll style. Wrap tightly in plastic wrap. Refrigerate 3 hours or overnight. Trim the ends off roll-ups. Cut rolls in slices. Store in an airtight container in the fridge for up to 2 days.
