1-2# boneless, skinless chicken breasts, cooked & diced
3 cans Great White Northern Beans
1 can Ro*tel w/green chilies
! Tbsp. vegetable oil
1 - 4 oz. can chopped green chilies
1 medium onion, diced
2 tsp. cumin (I use 3/4 tsp.)
3 garlic cloves, minced
1 tsp. oregano (I use 1/2 tsp.)
1 1/2 tsp. cayenne pepper (I use 3/4 tsp.)
1/2 tsp. salt
1 - 14 1/2 oz. chicken broth
3 cups Monterey Jack cheese
1 - 16 oz. container of sour cream

Directions:
Directions:
Cook chicken and shred. In a small skillet, cook onion and spices in oil. Combine beans, broth, Ro*tel, green chilies, onion mixture, and chicken in soup pot. Cook on medium-low heat for 10-15 minutes. Stir often. Add cheese and sour cream. This is ready to eat once the cheese is melted.
