1 lb boneless chicken breasts
1/4 c red wine vinegar
1/3 c sugar
1/2 c water
1/2 tsp dried oregano
2 small red onions, sliced
1/2 c mild salsa
1/2 lb Jack cheese, sliced
4 hoagie rolls

Directions:
Directions:
Place chicken in a microwave-safe dish with lid. Microwave for 5 minutes, check for doneness. Microwave another 2-4 minutes if needed. Use two forks to shred.

Preheat broiler to 400 F.

In a sauce pan, bring vinegar to simmer over medium-high heat. Stir in sugar, water and oregano until sugar is dissolved. Add sliced onions, simmer 2 minutes. Remove onions with slotted spoon and place in bowl with chicken. Stir in salsa.

Split hoagie rolls and lay, open on a cookie sheet. Broil 2-4 minutes or until light golden. Remove the roll tops and set aside. On the roll bottoms, divide chicken/onion mixture evenly onto each roll. Top with slices of Jack cheese. Broil 2-4 minutes or until cheese is melted. Top and serve.
