Ingredients: 2 tbsp vegetable oil 1 onion diced 1 bell pepper, diced 2-3 tomatoes, diced 1 leek, sliced 4 cloves garlic 1 habanero, optional 2 cups fresh peanut butter 1 can tomato sauce 2 Maggi cubes, if available

Directions:1. Put onion, pepper, tomato, leek, garlic, and some water into a blender. Blend until coarsely pureed. 2. Add oil to a large saucepan on medium-high heat. 3. Add vegetable puree, tomato sauce, and crushed Maggi cubes to the oil and cook for 3-5 minutes. 4. Put peanut butter into a medium bowl. Gradually mix in water until you can easily stir it with a spoon. 5. Add thinned out peanut butter to the saucepan. 6. Remove top of habanero and put the whole habanero into the sauce. This will give it some spice without overpowering it. The further down you cut into the habanero, the spicier it will be. 7. Cook for 15-20 minutes until thick and creamy. 8. Serve with fufu or over rice. |

Notes: If you really want to make this spicy, you can add some or all of the habanero to the vegetables in the blender. If you do this, I recommend you use a yellow or green habanero. Green habaneros are the most mild, yellow are medium, and red are the hottest.
