Ingredients: 1 lb ground beef Salt and Pepper to taste 1 clove garlic, minced 1/2 tbsp Worcestershire sauce Bread Crumbs, as necessary 6-8 slices bread 1 Onion, thinly sliced 2 tbsp butter 1/4 cup ketchup 1/4 cup mayo 2 tbsp relish 1/2 tbsp hot sauce 6-8 slices cheese Mayo for spreading Additional toppings as desired

Directions:1. In a frying pan over medium heat, melt 2 tbsp butter. Decrease temperature to medium-low. Add onions. Cook onions, stirring very occasionally, until golden and caramelized, about 20-30 minutes. 2. Meanwhile, mix ground beef, salt and pepper, garlic, and Worcestershire sauce. If necessary, add a little bit of bread crumbs to make the mixture more moldable and less runny. 3. Form the meat into 3-4 patties. Cook on a grill or frying pan. 4. In a small bowl, mix together ketchup, 1/4 cup mayo, and relish. 5. Spread mayo onto one side of each slice of bread. Make sure to get all the way to the edges. 6. Place bread, mayo side down, onto a griddle or frying pan on medium-high heat. Place a hamburger patty on each slice of bread. Put two slices of cheese on top of each patty. Place some of the caramelized onions on top of the cheese. Spread ketchup mixture onto the non-mayo side of the leftover slices of bread. Place these slices, mayo side up, onto each of the patty melts. 7. Cook until cheese is melted and both the top and bottom slices of bread are golden brown. 8. Slice each patty melt in half, diagonally. Serve warm. |

Notes: You can replace the relish with 1/4 tsp ground chipotle pepper. That gives it a nice smoky flavor. Other toppings are also great and can be added before placing the top slice of bread on the patty melt. Some of my favorites are guacamole, tomatoes, or slices of avocado.
