1 large (32 oz) pkg California frozen vegetables
1 sleeve Ritz crackers
1 stick butter, melted
1 pkg Velveeta cheese slices

Directions:
Directions:
1. Preheat oven to 350º.
2. Boil vegetables until slightly firm, not fully cooked, then drain.
3. Spread vegetables in 9x13 casserole dish.
4. Unwrap Velveeta slices and lay over vegetables to cover them completely.
5. Place Ritz crackers in ziplock and crush into crumbs.
6. Sprinkle crumbs over Velveeta slices.
7. Drizzle melted butter over cracker crumbs (if more butter is needed, melt additional butter to ensure most of the crumbs have some moisture from the butter).
8. Bake for 25 minutes.
