1 cup milk, scalded and cooled
2 Tbsp lard
3 Tbsp sugar
2 room temp eggs
1½ tsp salt
1 pkg dry active yeast
½ cup warm water
5-6 cups all purpose flour

Directions:
Directions:
Add 1Tbsp sugar to warm water. Sprinkle yeast over water and give a quick stir. Let sit until it blooms, about 5 mins. If it doesn’t bloom, don’t use it. Get new yeast. Beat room temp eggs. Melt lard in warm milk then beat into eggs. Add remaining sugar and salt. Add 1 cup flour and beat well. Add water and yeast. Add flour 1 cup at a time until you achieve a soft elastic dough that isn’t sticky. The kneading process takes time. Don’t rush it. Oil a large bowl. Place dough ball in, flip ball around to oil entire surface. Cover and set bowl in warm place to rise. When double in size, punch down and cover to rise again. When doubled again, form into buns and place on greased pans. Cover and rise again until double. Bake at 400 for about 20 mins until golden brown. Remove from pan onto cooling rack and butter the tops lightly.

Scalding milk means to bring to almost boiling but not actually boiling. 1 pkg of yeast = 2 1/4 tsp
