5 lb.bag of white potatoes
4 stalks celery ( diced)
1/2 med.onion diced
3/4 lb.bacon
1+1/2cup Hellmans real mayonnaise
1/8 cup of white vinegar
3/4 tbsp.salt
1/2 tsp pepper

Directions:
Peel and quarter potatoes ( not real big pieces if potato is large) Cover potatoes with water, boil till tender. Drain water.
NOTE: You can also boil potatoes with skin on, then after cooked, remove from water, let cool, then peel and dice into large bowl. LET COOL.
To test potatoes are done, stick with fork and if fork goes into potato easily they are done.
Place potatoes in large bowl to cool. Add in celery,onion,salt ,pepper.

Fry bacon in preferably iron skillet
Drain bacon but RESERVE the bacon grease for part of the potato dressing. Crumble bacon when cool
Take at least 1/3 cup of bacon grease and place in medium bowl and stir in the vinegar and mayo
Stir to get consistency of thick salad dressing. Dressing should have taste of bacon and mayo but vinegar should not over power both
Pour over potatoes, celery and onion, coat all with dressing then taste to see if you need any more salt or dressing
If more dressing is needed, repeat process of mixing bacon grease, mayo and vinegar, then stir and add more to potatoes

Sometimes the vinegar gets to strong..in which case just add more mayo.
This is just so great warm ...also the second day....always a big hit.
