1 package rice vermicelli noodles
2 -3 leeks
2 cups fresh mushrooms
Bunch of asparagus
Sesame oil
Sesame seeds
Ginger
Garlic
Fish sauce
Sweet soy sauce
Salt
Red pepper flakes
Black pepper

Directions:
Directions:
Bring pot of water to boil and cook noodles until al dente
Drain and rinse in cold water

Cut Leeks lengthwise and then corsely chop crosswise, soak in cold water to clean and then strain from water
In a large wok, heat with sesame oil
Sautée leeks until slightly softened

Slice mushrooms thickly
Remove bottom of asparagus and discard. Cut asparagus at an angle in 1-2 inch pieces
Add mushrooms and asparagus to wok.
Add all seasonings to preference
Cook to crisp tender

Add cooked noodles and stir fry. Add additional sesame oil to noodles

Serve with sesame seeds and additional red pepper flakes
