4-5 lb. lean pork roast, excess fat trimmed, cut into 2 inch pieces
Salt and pepper
1 Tbsp. olive oil
1 batch mojo sauce

Mojo Sauce
1 cup beer
1 head garlic, cloves separated, peeled and minced.
1/2 cup fresh orange juice.
1/4 cup lime juice.
1 tsp. oregano
1 tsp. ground cumin
1 tsp. salt
1/2 tsp. freshly cracked black pepper

Directions:
Directions:
Prepare mojo sauce by whisking all ingredients together. Set aside.

Season pork with salt and pepper. Sauté pork in instant pot or skillet, one half at a time, in oil until pork is browned. Pour mojo sauce into instant pot or crockpot. Toss pork with mojo sauce. Follow directions for instant pot for cooking meat. Use high pressure and cook for 30 minutes. Release pressure naturally. ( For crockpot, cook meat for 4 hours on high or 8 hours on low.)
Shred pork and transfer to a large baking sheet. Spoon about 1/3 leftover juice on top of pork and broil for about 4-5 minutes. Add another 1/3 juices to pork, broil 5 minutes. Add the remaining juice to meat and toss. Sprinkle with cilantro and serve immediately in tacos, burritos, salads, etc.
