2 c cheddar cheese, shredded
1 tsp parsley
1 tsp sage
1 Tbsp olive oil
3 turnips, peeled and cubed
3 red or yellow potatoes, cubed
1 lb sweet potato, peeled and cubed
3 leeks, white parts sliced
1 lb carrots, peeled and sliced
salt and pepper
3 sprigs fresh rosemary

Directions:

Preheat oven to 350 F.

In a bowl, mix cheese, parsley and sage.

In a large, deep, greased casserole dish, layer all veggies. Nestle the sprigs of rosemary in the veggies. Drizzle with oil. Sprinkle with salt and pepper. Top with cheese. Cover and bake 40-50 minutes. Uncover and bake 15 minutes. (Don't eat the rosemary - just discard it.)
