3 lbs yellow potatoes
2 leek
1 tsp salt
1/2 tsp pepper
1 lb bacon
1 large handful baby kale
8 oz sour cream

Directions:

Peel and quarter potatoes. Place in a crock pot and fill with water until the potatoes are just covered. Slice the white and light green parts of the leeks. Add to crock pot along with salt and pepper. Cook on low for 8 hours.

During the last hour of cooking, fry up the bacon. Set on a paper towel to drain. Then chop into 1 inch pieces.

Use an immersion blender to blend the potatoes and leeks in the crock pot. Add baby kale and sour cream. Stir until sour cream is fully incorporated. Stir in bacon. Taste and adjust the salt and pepper if needed.
