1 pound fettuccine

4 ounces Parmigiano Reggiano grated fine (plus more for serving)
5 Tbsp unsalted butter, cut into five pieces

Directions:
Directions:
Bring 3 quarts water to boil in a large Dutch Oven.
Add pasta and 1 tablespoon salt.
Cook, stirring frequently, until al dente.
Reserve 1 cup cooking water.
Drain pasta and return to pot.
Add the Parmigiano-Reggiano, butter, reserved cooking water and 1/2 teaspoon salt to the pot.
Set the pot over low heat and using tongs toss and stir the pasta. Combine for 1 minute.
Remove the pot from the heat, cover and let pasta sit for one minute.
Toss pasta vigorously once more so sauce thoroughly coats the pasta.
Make sure cheese clumps are emulsified into the sauce, 1 minute.
Season, salt and pepper to taste.
Transfer pasta to individual bowls and pass extra Parmigiano-Reggiano.
