1 whole chuck roast 2.5 to 4 pounds
1 can of beef consume or beef broth
3 heaping tablespoons good seasons Italian dressing mix
1 teaspoon salt
1/4 cup water
16 oz pepperoncini peppers with juice (these make the meat very spicy)

Combine all ingredients in a heavy pot or dutch oven. Cover and bake at 275º for 5 to 6 hours or until meat is fork tender and falling apart. remove from oven and shred with 2 forks.

can make the day before and refrigerate, removing the hardened fat before reheating.

serve on buttered, toasted rolls topped with cheese and broiled. Serve with juices from the pot.

To make "Chicago Beefs", replace the Pepperoncini with a jar of Giardiniera.
