1 tsp. salt
5 tsp. dill weed
1 tsp. thyme
2 tsp. basil
2 tsp. pepper
3 tsp. garlic powder
1 tsp. fennel
Clove of garlic
4-5 pound pork loin

Directions:
Directions:
Mix all spices except clove of garlic together; set aside. Clean garlic and slice. Cut pockets for garlic in pork; place garlic in pockets around entire roast to taste. Rub porketta seasoning into all sides of roast. Wrap tightly in plastic wrap, followed by foil, then ziploc bag. Date and leave in freezer for a minimum of one month. Bake at 350º for 2 - 2.5 hours until temperature reaches 160º.
