1 10-inch pie crust
1 tsp butter
1 1/2 c finely chopped onion
1/4 lb sliced mushrooms
1/2 tsp salt
1/2 tsp thyme
1/2 tsp marjoram
1/2 tsp basil
1/4 tsp dill
1/4 tsp pepper
1 1/2 c grated Swiss cheese
5 eggs
1/2 c milk
2 Tbsp flour

Preheat oven to 375 F.

In a skillet, saute onion in butter over medium heat for 5 minutes. Add mushrooms and saute 3 minutes. Add all seasoning and saute 2 minutes. Remove from heat and let cool.

In a bowl, whisk eggs, milk and flour.

Spread mushroom mixture on bottom of pie crust. Sprinkle cheese over. Pour egg mixture over cheese. Sprinkle with paprika. Bake 35-45 minutes or until the center is set (no longer giggly).

You can get creative with this one. I like sauted asparagus and jack cheese. Sauted tomatoes and spinach with cheddar cheese.
