1 1/4 c flour
2/3 c sugar
1/2 tsp salt
1 tsp baking soda
1/2 c shortening
3 ripe bananas
2 eggs

Line two bread pans with parchment paper. Preheat oven to 350 F.

In a bowl, combine flour, sugar, salt and soda with a fork. In another bowl, beat shortening, bananas and eggs. Add wet to dry ingredient and mix until just combined (do not over mix). Spoon evenly into each bread pan. Bake 40-45 minutes or until a toothpick inserted in the center comes out clean. All to cool 10 minutes before slicing.

Grandma Charlotte Emigh developed this recipes. She one second place at the county fair with it. She would have won first but the judges said it was "too moist". I think it's perfect! You can also make muffins instead of bread. Just fill lined muffins tins to 3/4 full and bake 20-25 minutes.

Or make into a cake. Use 4 bananas and oil instead of shortening. Pour into a greased 8 x 8 square glass baking dish. Bake 40-45 minutes or until toothpick comes out clean. Allow to cool and then top with cream cheese frosting.
