4 eggs
1 1/2 c sugar
2 c pumpkin puree
1 1/2 c vegetable oil
3 c flour
2 tsp baking soda
2 tsp baking powder
1 tsp cinnamon
1 tsp salt
2 c chocolate chips

Directions:
Directions:
Line muffin tins. Preheat oven to 400 F.

In a large bowl, beat eggs, sugar, pumpkin and oil until well combined. In another bowl, use a fork to combine flour, baking soda, baking powder, cinnamon and salt. Add dry to wet and mix. Fold in chocolate chips.

Fill muffins to 3/4 full. Bake for 16-20 minutes or until a toothpick inserted into the center of one comes out clean. Remove from oven and allow to cool 10 minutes in the muffin tin. Then remove.

Delicious treat in the fall. I like to use fresh baked, pureed pumpkin; but you can use canned pumpkin puree too.
